Make a cheese cake.
Dough
250g all-purpose flour
1 pinch of salt
125g unsalted butter, softened
1 egg yolk
Cold water, enough to form a dough
A type of sharp cheddar cheese
50g heavy cream
2 large eggs
2 tablespoons (of a chopper) all-purpose flour
Salt and pepper to taste

Combine the flour, salt, and butter with your fingertips until it forms a coarse crumb
Add the egg yolk and water at a time, stirring until the dough is manageable
Let it rest for 30 minutes
Grease and dust the sides of a 25-centimeter-diameter cake pan, and refrigerate it for some time while preparing the filling
Filling
Grate the cheese, add heavy cream, mixing with a fork
Add 2 egg yolks and all-purpose flour, check the seasoning and add salt and pepper to taste
Mix well and incorporate the stiffly beaten egg whites carefully
Place the dough in the cake pan
Bake in a moderate oven until golden
Cover with aluminum foil, so it is well done
It takes about 50 minutes.
