In a bowl, whisk together the egg with melted butter, sugar, and lemon zest
Add flour until you get a stiff dough, cover with plastic wrap and refrigerate for 30 minutes
Roll out the dough, line a cake pan and bake until golden

Beat egg whites until frothy and add sugar
Fill the cake, top with meringue and bake until golden.
