Milk Cake Crumb
1 cup all-purpose flour
1/2 cup powdered sugar
6 tablespoons unsalted butter or margarine, chilled and cut into 12 pieces
3 tablespoons high-quality dark chocolate chips, sifted

120 grams dark chocolate, chopped
1/2 cup unsalted butter or margarine, softened
3 large eggs
1 cup all-purpose flour
1 teaspoon vanilla extract
2/3 cup all-purpose flour
1/2 teaspoon baking powder
Optional: 1 cup finely chopped nuts (walnuts or almonds)
Optional: Whipped cream for serving

Filling

2/3 cup all-purpose flour
1/2 teaspoon baking powder

To prepare the cake
Combine the flour, powdered sugar, and cold butter or margarine in a bowl
Mix until a crumb forms
Add the chocolate chips and mix until well combined
Mix in just enough water to form a ball with the dough
Grease the pan with butter or margarine
Press the dough into the bottom and sides of the pan
Allow the edges to relax and refrigerate while preparing the filling
To prepare the filling:
Melting the chocolate and butter in a low heat, stirring only to combine
Remove from heat and let cool slightly
In a separate bowl, beat the eggs with an electric mixer for 2 minutes
Gradually add the flour and beat well
Add vanilla extract and finally the chocolate mixture
Beat again
Pulse in the baking powder
Do not overmix
If using nuts, add them at this stage and mix quickly
Pour into the prepared pan and smooth top
Bake in a preheated oven at moderate temperature (160°C) for 50 to 60 minutes or until the edges are firm and the center is slightly jiggly
Let cool completely
If desired, serve with whipped cream.
