8 pre-made tart shells or homemade dough
1 cup of diced ham
or 1 cup of cooked spinach
1 small onion, finely chopped
2 tablespoons of butter or margarine
2 tablespoons of all-purpose flour
1 and a half cups of milk
2 tablespoons of grated cheese
salt and pepper to taste

Melt the butter or margarine
Add the onion and sauté for a few minutes
Add the flour and mix well
Gradually add the milk, mixing well
Cook, stirring until thickened
Add the grated cheese and mix well
Add the diced ham or spinach, or desired vegetable, and fill the tart shells
Bake in the oven to warm.
