Fry the onion in the olive oil until it starts to brown
Add the fish, parsley, and cook, stirring with a wooden spoon, over low heat (the fish will break apart as it cooks)
Season with salt and mustard
Mix well
Remove from heat and fill the cabbage leaves with 3 tablespoons of the fish mixture
Fold the edges to the center, forming small packages about 10cm in diameter
Place the packages seam-side down in a baking dish greased with olive oil or vegetable oil
Baste the packages with a little mustard
Bake in the oven for about 10 minutes, until hot and fragrant
Remove from the oven and serve warm
Serves 7 to 10 people (10 packages).
