Place the black beans in a large pot with water (about 3 centimeters above the beans)

Bring to a boil, cover, and simmer over low heat until the grains are tender

Drain the beans and mash with a potato masher

Heat the olive oil, sauté the garlic and add the chopped onion
When the onion starts to brown, add black pepper

Add the cooked black beans to the mixture, then stir in toasted cassava flour

Stir well with a wooden spoon until the mixture comes away from the sides of the pot

Season with salt to taste
