1 kg of ribs of beef cut into small pieces

1 handful of chopped fresh parsley
3 green scallions, chopped
1 kg of cassava peeled and cut into pieces
1 kg of ribs of beef cut into small pieces

Season the beef ribs with onion, mashed garlic, salt, and black pepper
Fry in olive oil for a few minutes until golden brown
Add the tomato seeds, vinegar, parsley, scallion, and enough water to cover the beef
Cook until the meat is tender
Add the peeled cassava pieces and enough water to cook them until they're soft
The result should be a thick creamy stew with the beef 'stewed' in it.
