4 cups of leeks, sliced thinly
4 tablespoons of butter or margarine
3 tablespoons of all-purpose flour
1 tablespoon of salt
1 cup of milk
1 tablespoon of chopped green pepper
1 cup of melted cheddar cheese, cut into cubes
1 cup of fresh bread crumbs
2 tablespoons of melted butter or margarine
4 cups of leeks, sliced thinly

Sauté the leeks in 4 tablespoons of butter or margarine until soft, about 5 minutes
Push the leeks to the side and add the flour and salt
Add the milk all at once and cook, stirring until thickened
Add the green pepper
Combine with the melted cheese, stirring until smooth
Pour into a baking dish
Mix in the bread crumbs and 2 tablespoons of melted butter or margarine
Sprinkle over the creme
Bake in a moderate oven (350°F) for about 20 minutes
Serve hot.
