In a large bowl, soak the oysters in liquid for about 8 hours

Cook the oysters in a pressure cooker for 30 minutes or until they're tender but still firm

Heat some oil in a small frying pan and sauté the onion and garlic until softened
Add the red bell pepper, curry powder, paprika, cinnamon, cumin, nutmeg, salt, and black pepper, stirring to combine

Add the cooked oysters with their juices to the pan and stir to coat
Cook for 20 minutes or until the sauce has thickened
Season with salt and black pepper to taste, then sprinkle with parsley
Serve hot or cold.
