1 pound beef (1 kg)
6 green olives, pitted
6 black olives, pitted
6 onions, peeled and sliced
Salt to taste
2 tablespoons all-purpose flour

1 cup tomato sauce
1/2 cup vegetable broth

Make several shallow cuts in the beef and add the olives and onions
Season with salt
Dust the beef with flour on all sides
Heat the olive oil in a pressure cooker and brown the beef on both sides
Add the onions and cook for 2 minutes, until softened
Add the red wine and let it simmer completely
Add the tomato sauce, vegetable broth, cover the cooker, and let it cook for 30 minutes after the initial cooking time
Open the cooker, ensure the beef is tender, and if necessary, cook for a few more minutes
Let the pressure release completely
Open the cooker again, sprinkle with chopped parsley, and serve with the tomato sauce.
