Wash and trim the garlic scapes, removing any darker leaves
Place the garlic in a saucepan with boiling water seasoned with salt and cook for about 10 minutes
For the sauce, mix in a bowl 1/2 cup of cooking water, egg yolks, lemon juice, and plain yogurt
Simmer over low heat, stirring constantly with a wooden spoon, until the sauce thickens well
Season to taste with salt and black pepper
Serve the sauce over the garlic scapes, and if desired, sprinkle with capers.
