Make a regular syrup with the egg yolks and water
In a bowl, beat the eggs and whites
Add the milk and vanilla extract, and mix well
When the syrup is boiling, add the egg mixture without stirring, and gently swirl the pan
Stir carefully to prevent the forming curds from breaking apart
Let it cool down, then pour into a bowl and refrigerate
Serve chilled, at 4 to 6 portions.
