4 1/2 cups all-purpose flour
1/2 cup orange juice
4 tablespoons sweet basil syrup prepared
3 tablespoons vegetable oil or butter
1/2 tablespoon olive oil
3 tablespoons rum
2 eggs

Sugar and cinnamon (for dusting) or honey
4 1/2 cups all-purpose flour

Place 4 cups of flour in a bowl
Make a depression in the center and add the remaining ingredients
Mix until a dough forms
Place the dough on a smooth surface dusted with the remaining flour
Knead well, allowing the dough to incorporate the flour gradually
Roll out small pieces of dough thinly with a rolling pin or pasta machine
Cut into 10cm squares
With a pastry bag, make four cuts in the center of the dough without reaching the edges
Carefully lift the two center strips and slide them over with the two from the edge
Fry slowly in hot oil until golden on both sides
Drain on paper towels and dust with sugar mixed with cinnamon or honey
Yield: 16 puffs.
