2 cups (each) of milk
2 cups (each) of lemon juice
2 cups (each) of sugar
8 eggs
1/2 cup (each) of grated Parmesan cheese

Microwave the mixture of milk, lemon juice, and sugar in a medium-sized bowl for three minutes on high
Batter the eggs lightly
Combine with the milk mixture and bake in the oven for an additional five minutes
Remove from microwave and, using a fork, break up the cooked eggs
Return to microwave and cook for another five minutes, on high, stirring with a fork halfway through
Add Parmesan cheese and mix well
Let it cool down and serve in individual portions
If desired, garnish with a lemon slice and a sprig of mint.
