Place the sugar in a large iron pot with 2 cups of water to prevent burning
Stir and bring to a boil, then add cinnamon and cinnamon quill to taste
Once boiling, let it simmer for 15 minutes to form a thick syrup
Meanwhile, strain the whole eggs and egg yolks through a sieve
Add milk and vinegar
When the syrup has thickened, add the egg mixture
Let it cook on high heat until granules form, about 15 minutes more
Reduce heat to low and let it simmer until cooked through, stirring occasionally to prevent sticking
This should take about an hour of cooking time
The purpose of vinegar is to make the ambrosia granular
Serve in 12 portions.
