500 g of amaretti cookies, cut into small pieces

Beat the egg whites until frothy
Add the lime juice, zest, and almonds
Continue beating until stiff peaks form

Gently fold in the amaretti cookies

Preheat the oven to 200°C (400°F)
Line a baking sheet with parchment paper and pipe small mounds of the mixture onto it, leaving space between each mound
Bake for 15 minutes or until the morsels start to set
Then, reduce the temperature to 150°C (300°F) and bake for an additional 5 minutes
Remove the morsels from the oven and let them cool in the baking sheet before transferring them to a wire rack to cool completely.
