Rinse the rice thoroughly and soak it in cold water that covers it for 30 minutes
In a large saucepan, bring the necessary amount of water to a boil
Add the rice, stirring well
Let the mixture come to a simmer and cook the rice for 2 minutes
Strain the water and quickly rinse the rice under cold running water
Drain well
Return the rice to the saucepan, cover it tightly, and cook over very low heat for 10 minutes
Remove from heat and let rest for another 10 minutes
Remove from heat and wait an additional 5 minutes
Use a fork to separate the grains before serving.
