2 tablespoons of olive oil or oil
1/2 cup of finely chopped onion
2 cloves of garlic, minced
2 cups of uncooked rice
2 tomatoes, peeled and seeded, diced
300g of chorizo sausage, diced
150g of prosciutto, sliced
4 cups of boiling water
3 cups of shredded cabbage
Chopped parsley, salt, and black pepper to taste

Heat the olive oil in a large skillet, then sauté the onion and garlic until softened
Add the rice and cook, stirring constantly, for 2-3 minutes
Add the tomato, chorizo, and prosciutto, and stir well
Add the boiling water, stir in the cabbage, and bring to a simmer
Season with salt and black pepper to taste
Simmer, covered, over low heat for about 20 minutes, or until the rice is cooked and fluffy
Remove from heat, let sit for a few minutes, then fluff with a fork
Transfer the rice mixture to a serving dish, sprinkle with chopped parsley, and serve.
