2 cups of cooked rice (use leftovers)
1/2 cup of chopped fresh parsley
1 small finely chopped onion
1 crushed garlic clove
1 cup of milk
2 slightly beaten eggs
salt and pepper to taste
1/3 cup of stuffed green olives, cut into slices
1/4 cup of grated Parmesan cheese

Preheat the oven
In a bowl, mix together the rice, parsley, onion, garlic, milk, eggs, salt, and pepper, to taste
Mix well
Place in an ungreased baking dish
Arrange the olives on top
Sprinkle with Parmesan cheese
Bake in a moderate oven for 40 minutes.
