1 cup fresh spinach leaves

1 Prepare the spinach by soaking it in 2 cups of water
2 Blend the cooked spinach with half of the water from step 1. Reserve
3 In a large skillet, heat the olive oil over medium heat
Sauté the onion and garlic until softened
Add the rice and stir to combine
Cook for 3 minutes
Add the blended spinach mixture and boiling water
Stir well
4 Season with salt to taste
Simmer, covered, over low heat
If necessary, add more water to complete cooking
5 When the rice is cooked, remove from heat
Fluff with a fork and stir in ricotta cheese
Serve immediately.
