Bring the water to a boil
Add the rice, onion, and salt
Cook slowly for 15 minutes, covered in a pot
Add the spinach, cook for another 10 minutes in the pot, stirring occasionally
Remove from heat
Add the cheese
Let it rest for 1 minute
Stir to mix
