Fry the lamb or beef with the seasoning of salt and black pepper in 4 tablespoons of butter
Lavage the spinach and chop it
Simmer the spinach in water for 8 minutes
Fry the onion lightly in butter
Squeeze out the excess water from the spinach and add the chopped onion
Finish frying for another 5 minutes
Mix with yogurt
Add the remaining seasonings and mix well
Beat the eggs in a bowl
Cook the rice in boiling water with salt and drain
Before putting half of the rice in the mold, take out 5 or 6 tablespoons of rice and mix it with the beaten eggs
Grease the mold with 4 tablespoons of melted butter
Line the mold with this rice mixture
Spoon the yogurt and spinach mixture over the top
Distribute evenly
Arrange the fried lamb or beef on top
Cover with the remaining rice and cook as for a chello recipe
It will have a delicious crust below.
