1 medium onion, chopped
4 cloves of garlic, minced
1/3 cup (chicken) oil
2 boneless chicken thighs, cut into small pieces
1 portuguese green pepper, seeded and cut into cubes
1 boneless turkey breast, cut into small pieces
1 carrot, peeled and cut into small pieces
1 celery stalk, cut into small pieces
1 cup of rice
3 cups of chicken broth
1 can of vegetable selection
Salt to taste

Heat
Saute the chopped onion and minced garlic in oil for 3 minutes over high heat, stirring occasionally
Add the chopped chicken, green pepper cubes, turkey breast, carrot, and celery, and cook until the meat is tender
Add the rice and chicken broth, and bring to a boil
Cook the rice until it's tender but not mushy
Add the vegetable selection, stir well, check the seasoning, and serve.
