1/4 cup of olive oil
1 kg of chicken cut into small pieces
1 medium onion, sliced
2 cloves of garlic, minced
1/2 red bell pepper, sliced
1/2 green bell pepper, sliced
Salt and black pepper to taste
1 teaspoon of hot paprika
Fresh parsley leaves to taste
1 cup cooked rice-grits
3 cups vegetable broth

1 Heat the olive oil in a large pot and brown the chicken
Add the onion, garlic, red bell pepper, and green bell pepper
Cook for 2 minutes
Season with salt, black pepper, hot paprika, and chopped parsley leaves
2 Add the cooked rice-grits, vegetable broth, and stir to combine
Simmer, covered, over low heat for 15 minutes.
