Wash the beet greens and stems in cold water. Drain. Finely chop, like collard greens. Cook without adding water for 5 minutes in a covered pan. Season to taste with salt and add 1 tablespoon of all-purpose flour per cup. Mix lightly and serve warm. If desired, garnish with hard-boiled egg.
