In a medium saucepan, melt the butter or margarine and sauté the onion without letting it brown
Add the rice, coconut milk, and water
The liquid should exceed the rice by about 2 cm
If necessary, add more water
Season to taste with salt and cook slowly, with the saucepan covered, until the liquid is absorbed and the rice is well cooked, for about 25 minutes
Stir occasionally while cooking
Serve hot, in a serving dish.
