Preheat the oven to a hot temperature (400°F)
Combine the milk and butter or margarine in a saucepan
Let it come to a boil
Add all the flour at once
Reduce the heat and cook slowly, stirring vigorously until the mixture detaches from the sides of the saucepan
Turn off the heat and let it cool for 5 minutes
Add the eggs one by one, beating well after each addition
Mix in the cheese and linguiça
Place in a round 8-inch baking dish, greased and floured
Brush with egg white and bake in a moderate oven (350°F) for about 30 minutes or until a toothpick inserted into the center comes out clean
Remove from the oven and serve hot or warm.
