Mix the eggs, soy sauce, grated carrot, and salt in a medium bowl with 1 tablespoon of water until well combined
Let it rest so that the foam dissipates
Gently grease a 22 cm diameter non-stick skillet with oil
When the skillet is hot, pour 1/4 of the egg mixture into it, carefully tilting it to spread the eggs evenly
Cook for about 2 minutes over medium heat until the edges start to dry
Remove from heat and let rest for 1 minute
Flip and cook for an additional 30 seconds over moderate heat to dry the other side
Repeat to make more omelets.
