3 tablespoons of unsalted butter or margarine
1 medium-sized onion finely chopped
4 cloves of garlic, minced
1 tablespoon of curry powder
1 teaspoon of ground cumin
1/3 cup of raisins, cut into pieces
1/3 cup of currants
1 cup of uncooked white rice (do not use parboiled)
2 1/4 cups of chicken broth
black pepper and salt to taste
1 tablespoon of grated orange zest
2 tablespoons of chopped fresh parsley
3 tablespoons of unsalted butter or margarine

In a heatproof glass or ceramic bowl, melt the butter in high-power microwave, uncovered, for 1 minute
Add the onion, garlic, curry powder, cumin, raisins, currants, and rice
Mix well
Microwave, uncovered, on high power for 4 minutes
Add the chicken broth
Cover with plastic wrap (Rolopack or Magipack) and microwave on high power for 20 minutes
Remove from the oven, carefully pierce the plastic wrap with a fork to allow steam to escape
Carefully remove the plastic wrap
Season with salt and black pepper
Just before serving, add the grated orange zest and chopped parsley
Mix well
Serve in 5 portions.
