In a large saucepan, combine the olive oil, garlic, rice, and smoked bacon
Cook over high heat, stirring constantly with a wooden spoon, until the rice is separate (approximately 2 minutes)
Add the remaining ingredients, mix well, and bring to a boil
Cover the saucepan, reduce the heat to low, and cook until the rice is tender (about 20 minutes)
Transfer to a serving dish and serve immediately
