3 1/2 cups of skimmed milk
1/4 cup of uncooked rice
6 tablespoons of raisins
1 egg beaten
1 tablespoon of vanilla extract
1/2 tablespoon of grated orange or lemon zest
optional sweetener or sorbitol to taste
1/4 teaspoon of ground cinnamon
3 1/2 cups of skimmed milk
1/4 cup of uncooked rice
6 tablespoons of raisins
1 egg beaten

Combine the rice and milk in a non-stick saucepan
Cover and cook over low heat for 1 hour or until the rice is tender
Add the raisins in the last 10 minutes of cooking
Remove from heat
Add the egg and mix well
Return to low heat again for 1-2 minutes
Remove from heat and add the vanilla extract, grated zest, and optional sweetener
Transfer to a bowl
Sprinkle with cinnamon and refrigerate
Serves 5 portions with 112 calories each.
