2 cups of rice
1 tablespoon of olive oil
1 tablespoon of light margarine
1/2 onion, finely chopped
4 cups of hot water
1 cup of sliced mushrooms
150g of grated cheddar cheese
1 cup of cooked spinach, chopped
1/2 cup of low-fat milk
Salt to taste
2 cups of rice
1 tablespoon of olive oil
1 tablespoon of light margarine
1/2 onion, finely chopped
4 cups of hot water
1 cup of sliced mushrooms
150g of grated cheddar cheese
1 cup of cooked spinach, chopped
1/2 cup of low-fat milk
Salt to taste
Heat the olive oil and light margarine together and sauté the onion
Add the rice and stir until it starts to stick to the pan
Add the hot water and cook for 10 minutes
Add the mushrooms, spinach, and season with salt
Cook over low heat until the rice is tender
If necessary, add more hot water
Add the milk and cheddar cheese, mix with a fork and remove from heat
Let it rest for 5 minutes
Serve immediately.
