1.5 kg of chicken cut into pieces
2 tablespoons of olive oil
1/2 cup (chopped) of onion
2 tablespoons of chopped fresh parsley
1/4 cup (chopped) of celery
1 minced garlic clove
4 sprigs of rosemary
1/2 cup (chopped) of white wine
Salt and black pepper to taste

Heat the olive oil and sauté the onion
Add the parsley, celery, and garlic, and cook for one minute without stopping to stir
Add the chicken pieces and brown them on all sides
Add the rosemary, salt, and pepper
Add the white wine and scrape the bottom of the pan with a wooden spoon to loosen any stuck bits
Cover the pan and simmer over low heat
Turn the chicken occasionally during cooking and add hot water as needed
Simmer until the meat falls off the bones and serve immediately.
