1 ham tender, boneless
1 medium onion
2 cloves of garlic
2 eggs
1/2 teaspoon black pepper
1 tablespoon mustard
1 cup fresh parsley, chopped in a blender
4 tablespoons chopped green peppers
1 red bell pepper, chopped
1 cup sweet and sour sauce
2 cups red wine
Sauce:
2 tablespoons finely chopped onion
1 tablespoon butter or margarine
1 tablespoon all-purpose flour

Sauce:

1 tablespoon all-purpose flour
Score the two ends of the ham and remove the central part, leaving it hollow
Pulse the meat through a food processor with the onion and garlic
Season with black pepper, mustard, and green peppers, and mix well
Add the eggs, breadcrumbs, and red bell pepper, and mix again
Stuff this filling into the ham cavity, pressing firmly
Place the ham in a baking dish
Cover the entire ham with sweet and sour sauce
Pour the red wine around it
Put it in the preheated oven at moderate temperature (170°F) for 1 hour
After 20 minutes, baste the ham several times with the liquid from the baking dish
Remove the ham from the baking dish
In a pan, melt the butter or margarine
Add the onion and let it cook for a few minutes
Add the flour and cook while stirring well
Add the sauce left over in the baking dish, and mix again
Serve separately with the ham sliced into pieces, enough for 8 to 10 people.
