Crush the olives with a hammer, wash them and place them in a container
Cover with water
Change the water morning and evening for three days
If the olive has lost its bitterness, do not change the water anymore, otherwise continue to change the water every two days until the olive becomes sweeter
Keep the olives always well covered with water and be careful to close hermetically the container
These olives can be consumed as is, sprinkled with salt or decorated like tagines.
