Ingredients
4 cod fillets with 300g each
2 eggs, lightly beaten
2 cups of breadcrumbs
2 1/2 cups of olive oil
2 large onions, sliced into rings
1 kg of peeled and sliced potatoes
4 cloves of garlic, minced
400g of cooked broccoli
1 cup of green pitted olives

Preparation

Place the fish on a wire rack and soak it in water inside a colander, but not in contact with the salt that will settle at the bottom of the container
Change the water at least five times

Drain and let the fish soak in hot water for 20 minutes
Drain again and remove the bones and skin
Dip the fillets in eggs and then in breadcrumbs

Preheat the oven to medium temperature
In a large skillet, heat two tablespoons of olive oil and fry the cod fillets until they're golden brown
Drain on paper towels

In a medium-sized baking dish, combine the fried cod, onions, potatoes, garlic, and drizzle with the remaining olive oil
Bake for 25 minutes or until the potatoes and onions are tender
Add the broccoli and olives and bake for an additional five minutes
Serve hot.
