1/2 pound of cod
2 tablespoons of olive oil
2 medium-sized onions, finely chopped
3 medium-sized tomatoes, seeded and finely chopped
2 tablespoons of parsley, finely chopped
1 tablespoon of sweet paprika
2 cloves of garlic, minced
1 bay leaf
4 cups of hot water
1 1/2 cup of rice
2 well-beaten egg yolks
1 tablespoon of lemon juice

Soak the cod in cold water for one day and night, changing the water three times
Drain the cod, remove the skin and bones
Cut into small pieces
In a pan, fry the onion, tomato, parsley, paprika, garlic, and bay leaf in olive oil, stirring occasionally
Fry for 4 minutes or until everything is well mixed
Remove the bay leaf
Add the chopped cod and some hot water
Cook for 5 minutes, then add the remaining water and rice
Stir and cook over low heat with the pan half-covered, until the rice is tender
When serving, add the egg yolks and lemon juice
Shape the rice into a decorative shape, press down gently, and unmold onto a platter
Serve 6 portions.
