1 kg of desalted cod for 24 hours

1 green bell pepper, seeded, sliced
1 red bell pepper, seeded, sliced
3 tomatoes, sliced
1 ground cumin
1 sprig of thyme
1/2 teaspoon curry powder

Deshell and cut the cod into pieces. Reserve
In a pan, heat the olive oil and layer half of the onion, bell peppers, tomatoes, and spices
Place the cod on top and cover with the remaining ingredients
Cover and cook over low heat for 20 minutes or until the cod is tender
Distribute onto plates, garnish with thyme sprigs, and serve.
