1 cup of white wine
1/2 cup of medium chopped onion
1/2 cup of garlic pulp (white part only)
1/2 cup of chopped carrot
3 tablespoons of olive oil
1 tablespoon of thyme leaves
800g of cod
500g of white beans
2 cloves of minced garlic
1 sprig of thyme
1 tomato, peeled and seeded, diced
Salt and black pepper to taste

Cures the cod (see below)
Dessalt the cod and flake it into pieces, removing the skin and bones. Reserve

In a pan, heat the olive oil and sauté the onion until golden brown
Add the garlic pulp and cook for 1 minute
Add the thyme leaves and tomato, stir well, then add the white wine
Simmer for 10 minutes
Add the cod, salt, and black pepper, and simmer for 20 minutes

Place the drained white beans in a pan with the sprig of thyme and cover with water to 2 inches above the beans
Briefly bring to a boil, then reduce heat and simmer, covered, for 40 minutes or until tender
Reserve 1 cup of cooking liquid and drain the beans

Combine the cod, white beans, and reserved cooking liquid
Simmer for 5 minutes
Serve over toasted white bread with olive oil.
