1/2 kg of dried cod, salted
3 medium-sized onions, chopped
3 cloves of garlic, crushed
olive oil
60 g of butter
1 kg of peeled tomatoes
1 tablespoon of dried thyme
1 bay leaf
2 cups of red wine
1 can or cup (180 g) of tomato extract
1/4 cup of capers
1 cup of black olives without pit

Leave the cod in the sauce for 24 hours
A little before preparing it, make the sauce: fry the onions and garlic in 1/4 cup of olive oil and butter
When the onions are soft, add the chopped tomatoes, thyme, bay leaf, wine, and tomato extract
Cook over low heat until the sauce thickens slightly
Add the capers, olives, season with salt and pepper, and cook for an additional 30 minutes
DRAIN the cod and cut it into squares
Dredge in flour and fry in olive oil until golden brown
Cover with the sauce and serve
