Leave the cod to soak overnight
The next day, remove the skin, boil it, change the water, and let it cook until tender
Then grind or blend
Butter a pie dish or individual ramekins
Place in each ramekin a slice of mozzarella, a spoonful of ground cod, some tomato sauce, and a spoonful of mashed potatoes
Sprinkle with plenty of grated cheese
If using individual ramekins, place a tomato slice on top of each one
Put it in the hot oven until the mozzarella melts
When serving, spear a parsley sprig to the center of the tomato slice
