1 kg of cod, desalinated and flaked
500 g of melted butter
2 cloves of garlic, minced
1 onion, chopped
2 tomatoes, diced
1 tablespoon of cumin
1/2 cup of chopped parsley
1/2 cup of chopped chives
1/2 cup of pimentos, sliced
4 cups of milk
200 ml of coconut milk
700 g of cooked and cubed cassava
200 g of grated Minas cheese

In a large pot, heat the butter
Add the garlic and sauté
Add the onion, tomato, cod, cumin, parsley, chives, pimentos, and milk
Stir and cook for 25 minutes
Add the coconut milk and cassava and let it simmer for another 10 minutes
It should form a thick sauce
Turn off the heat, add the cheese, and if desired, sprinkle with more parsley
Serve with white rice.
