1 cup of mashed bananas
1 1/4 cups of shredded coconut
1/4 cup of all-purpose flour
1 teaspoon of active dry yeast
2 tablespoons of melted butter or margarine
2 tablespoons of granulated sugar
250 g of butter or margarine
1 cup of granulated sugar
1 egg
1 teaspoon of vanilla extract
1 cup of mashed bananas
1 1/4 cups of shredded coconut
1/4 cup of all-purpose flour
1 teaspoon of active dry yeast
2 tablespoons of melted butter or margarine
2 tablespoons of granulated sugar
Cream together the butter or margarine, sugar, egg, and vanilla extract
Add the mashed bananas and 3/4 cup of shredded coconut, and mix well (if using packaged coconut, moisten with water according to package instructions)
Sift the flour, yeast, and add it to the mixture, mixing well
Mix well and pour into a greased 28 cm x 19 cm baking dish
Mix together the remaining coconut with the 2 tablespoons of melted butter or margarine, granulated sugar, and spread over the dough
Bake in a moderate oven (170°C) for 45 minutes or until a toothpick inserted comes out clean
Cut into bars.
