Scrape the flesh from the sweet potatoes
Mash well, along with warm milk, salt, and pepper
Beat the eggs slightly
Add the chopped parsley and mix into the sweet potato flesh
Mash thoroughly
Add 1/4 of the whipped egg whites
Mix well
Add the remaining egg whites and mix carefully
Fill the sweet potato skins and bake in a hot oven (400°F), for 10 to 15 minutes, until golden brown
