Preheat the oven to 250°C (hot)
Wash the sweet potatoes thoroughly in cold running water using a brush
Place them in a baking dish and bake until they're soft and the skin starts to crack when touched
Remove from the oven and, with your hand wrapped in a cloth, give each sweet potato a gentle 'smashing' motion
In a large frying pan, heat the olive oil with the garlic
Add the sweet potatoes gradually and fry both sides until golden brown
Remove the garlic before it burns
When removing the sweet potato from the oil, allow it to drain on absorbent paper
Season with salt and serve still warm
