1 small orange, peel removed, cut into segments
1 tablespoon orange juice
1 tablespoon soy sauce

Wash the vegetables and drain in a colander
Mix the escarole with the arugula and place them in a salad bowl
Drizzle with soy sauce and orange juice
Garnish with orange segments.
