Salt and black pepper to taste
3 kg of lizard
1 xicara of vinegar
2 onions, sliced
1 bell pepper, sliced
To taste: cinnamon, sweet pepper, salt, and black pepper
2 soup spoons of butter
1 soup spoon of tomato extract
2 liters of tucupi sauce
1 hand full of jambu leaves, blanched
Salt and black pepper to taste
The night before, marinate the lizard in vinegar, onion, bell pepper, cinnamon, sweet pepper, salt, and black pepper
Next day, melt the butter in a large pressure cooker until it's hot
Add the tomato extract and stir well
When it's very hot, add the lizard and cook, stirring occasionally, until it's evenly browned
Once it's golden brown, add enough water to cover half of the lizard and let it simmer for 1 hour in the pressure cooker
Check if the lizard is tender, then add the tucupi sauce
Let it simmer for another 10 minutes without pressure
Add the cooked jambu leaves
Remove the lizard from the cooker and slice it into portions
Serve with tucupi sauce and jambu leaves
