For the sponge
2 oz all-purpose flour
2 oz active dry yeast
1 cup lukewarm water
For the dough
18 oz all-purpose flour
4 tablespoons unsalted butter, softened
1 tablespoon salt
6 ounces unsalted butter, softened
5 large eggs
1 cup lukewarm water
For the filling
3/4 cup pitted green olives, sliced
3/4 cup pitted black olives, sliced
1/2 cup smoked ham, diced
5 tablespoons chopped fresh parsley
1/2 cup beef broth concentrate
2 cloves garlic, minced

Step 1
In a small bowl, combine the sponge ingredients
Cover and let rest for 30 minutes
Step 2
Transfer the sponge to a larger bowl and add the remaining dough ingredients
Beat until a soft dough forms
Step 3
Add the filling ingredients and mix well
Cover and let rest for 45 minutes
Step 4
Mold into panettone shapes
Cover and let rise to almost the top of the mold
Bake in a medium/high oven preheated for 45 minutes.
