In a refrigerator-proof form, combine all the ingredients except for the potatoes and cheese
Mix well
Add the potatoes and mix again
Cover with another form and microwave on high for 9-12 minutes or until the potato is tender, stirring twice
Remove from the oven and let it rest covered for 4 minutes, stir, and sprinkle with cheese.
