Melt 2 tablespoons of butter in a saucepan over low heat
Add the flour, salt, and pepper
Gradually add the milk while stirring constantly until it thickens and bubbles
Remove from heat
Mix the white sauce with grated cheese and add to cut sweet potatoes
Transfer to a 1-liter baking dish
Mix biscuit crumbs with melted butter and sprinkle over the sweet potato mixture
Bake in a moderate oven for 20-25 minutes or until golden brown
Serve 6-8 portions.
